One Banana Banana Bread

Small batch banana bread recipe for those who only have one banana left, are in their single girl era, or are too lazy to make a full batch

A very quick and easy banana bread recipe, this small batch banana bread is not dense like traditional banana bread– instead it’s softer (more like a muffin) and very moist, it’s not overly sweet but has those warm notes of caramel, cinnamon, and pecans

One Banana Banana Bread Recipe:

  • 1 very very ripe banana, ~110 – 120g
  • 60g of all purpose flour (BUT if you ABSOLUTELY CANNOT MEASURE… 1/2 CUP)
  • 2 TBSP BROWN SUGAR & 3 TBSP WHITE SUGAR
  • 1 EGG, ROOM TEMP
  • 2 TBSP BUTTER
  • 1 TBSP NEUTRAL OIL
  • 1/4 TSP BAKING POWDER
  • 1/8 TSP BAKING SODA
  • 1/2 TSP VANILLA EXTRACT OR PASTE
  • 1/4 TSP SALT
  • 1/4 TSP CINNAMON POWDER
  • 1/4 TSP PUMPKIN SPICE POWDER OR GROUND NUTMEG
  • Preheat your oven to 350F
  • Melt butter and add in oil, set aside to cool
  • In a separate bowl, combine flour, sugars, baking powder, baking soda, salt, cinnamon and pumpkin spice together
  • Mash up one very very ripe banana, add in the egg and vanilla extract and mix until incorporated
  • Lightly mix together flour and banana mixture before adding in the melted butter and oil, mix until JUST incorporated (this might just take 3o seconds)– do not over mix or the batter will be too dense
  • pour into a small greased loaf pan, pop into the oven for ~35 minutes, time will vary depending on your oven — check at 32 minute mark with a toothpick

Notes: I like using both brown and white sugar in my banana bread to get that moist, deep caramel flavor throughout. Additionally, using both butter and oil ensure we get a nice rich flavor while still maintaining the moisture.
