Making the Viral Banana Bread Syrup

The secret to making the best banana bread syrup: BUTTER!

Banana Bread syrup has been going viral on TikTok, especially in the form of a Banana Bread Matcha. And while there’s lots of recipes for it, I feel like most of the recipes are missing a key flavor component– butter!

Syrups are one of my favorite homemade things, most of the time you can just eyeball it, double it, half it, etc. and adjust it to taste as you go. Here’s my take on it. It’s beautiful in matcha and coffee or even to make a banana bread milk.

Banana bread syrup:

  • 1 very very ripe banana
  • 1/2 c of brown sugar
  • 1/2 c of water
  • 1/2 – 1 tsp of cinnamon
  • 1/4 TSP TO 1/2 TSP SALT, TO TASTE
  • 1/2 – 1 tsp vanilla extract or paste
  • 1/2 – 1 tbsp of butter
  • optionaL: 2 tbsp of maple syrup!!
  • ash up your ripe banana, make sure it’s smooth
  • Add mashed banana to a pot with your sugar and water, bring to a light boil
  • let it lightly boil until the colors turns into a dark amber, ~2 – 5 minutes
  • add in butter, cinnamon, salt (and maple syrup) before turning off the heat
  • once off the heat, add in the vanilla (doing so before will make all of the vanilla evaporate)
  • if it’s too thick feel free to add in a bit of water before letting it cool before storing in the fridge

NOTES:

  • syrups are sometimes just made based on vibes, adjust each ingredient as you go
  • maple syrup is optional but will add another layer of flavor to the syrup! also will make the syrup a bit more liquid-y
